rby's is keeping its 10-gallon hat logo, but is spurning its long association with unhealthy fast food. How? By "convincing diners it is a destination for fresh" sandwiches, says Ari Altstedter at Bloomberg. The roast-beef chain will try to woo Subway fans with a low-calorie turkey sandwich and other new fare, and commercials bragging that — unlike some chains — Arby's slices its meat fresh in stores.
