Slow cookers are a godsend when it comes to breaking down tough, cheaper cuts of meat like brisket and shoulder into soft, luscious dinners. I can't stop making old-fashioned meals like beef stroganoff in mine, for instance. But people who don't eat meat deserve to let their dinner cook itself while they curl up on the couch, too — so we're coming back to the Crock-Pot, this time armed with hearty, soul-satisfying vegetarian recipes for soups, stews, and even slow-cooker artichokes (who knew?).
