Though certain chefs may disdain the meal—Anthony Bourdain has called it a “dumping ground” for restaurant leftovers—brunch haters today seem to be merely a vocal minority. For proof, note the long lines at many top places. A relaxing atmosphere is essential, but the best spots recharge us “first and foremost through their food.”
