A leading cheesemaker has asked French food regulators to allow a change in the recipe for Camembert. Isigny-Sainte-Mere is one of just 10 companies that make true Camembert according to the 18th-century recipe, certified with the Appellation d’Origine Contrôlée label. The company says it wants to start using pasteurized instead of raw milk, to protect consumers from dangerous contaminants such as E. coli. Some other Camembert makers are appalled. They say using treated milk will produce an altogether different cheese, undeserving of the AOC seal. France’s National Institute for Origin and Quality will rule on the proposal within the year.
