Shoryu Ramen set to open in Manchester
The Japanese noodle house brings steaming bowls of soup and a selection of sake to its first restaurant outside London
The people of Manchester will soon be feasting on authentic Japanese cuisine thanks to Shoryu Ramen's decision to choose the city as the location for its seventh restaurant.
Specialising in traditional food from Fukuoka's Hakata region, the restaurant is famous for its tonkotsu ramen bowls – noodle soups made from a rich 12-hour pork broth, served with a variety of toppings such as char siu barbecue pork belly, nitamago egg, kikurage mushrooms and nori. Vegetarian variations are also available, made from a tonyu soy milk and white miso base.
"UK noodle culture has really become more sophisticated in recent years," says Shoryu founder Tak Tokumine. "As the British market has become more accustomed to noodles, we're able to introduce very specific dishes, such as Hakata tonkotsu ramen, for those looking for the real deal. I want to make sure everyone can experience real flavours and dishes on their doorstep, so I am really pleased to be able to introduce authentic ramen to the people of Manchester."

Other specialities on the menu include fluffy steamed Shoryu buns, handmade daily with a choice of six fillings, including soy marinated chicken, tiger prawn tempura and Wagyu beef, and tetsunabe gyoza dumplings, filled with pork and served the traditional Hakatan way in a sizzling tetsunabe cast-iron skillet.
Shoryu's sake sommelier Mimi Tokumine has devised an extensive sake menu that includes recommended offerings from Gekkeikan, a Kyoto-based brewery that has been producing sake for over 350 years. There is also a good selection of sake cocktails, alongside other popular concoctions served with a Japanese twist, such as the yuzu mojito – a mix of strawberries, lime, mint, sugar, white rum and yuzu citrus umeshu over crushed ice. Japanese beers such as Kirin, Asahi and Musashino craft beer will also be available.
